Elisabeth S. emailed us her Avocado and Artichoke Heart Salad—a fresh, easy-to-make salad that’s perfect for showcasing the bright, citrusy flavor of our Calamondin Vinaigrette.
Avocado and Artichoke Heart Salad
Ingredients:
- 1 avocado, coarsely chopped
- 1 can quartered artichoke hearts (packed in water)
- 1/4 - 1/3 cup chopped parsley
- 2 thin slices of red onion, chopped
- 2 tablespoons Big Mama’s Calamondin Vinaigrette
- Splash of white vinegar
- Salt and pepper to taste
Instructions:
- In a medium bowl, combine the avocado, artichoke hearts, parsley, and red onion.
- Mix the Calamondin Vinaigrette with a splash of white vinegar, then drizzle over the salad.
- Toss lightly to coat, and add salt and pepper to taste.
