Big Mama's Roasted Asparagus

Imagine a bed of tender, roasted asparagus, glistening with our vinaigrette and sprinkled with crunchy almonds. The asparagus is perfectly cooked, with a slight char on the outside and a soft, juicy center. The whole dish is finished with a drizzle of Big Mama's Calamondin Vinaigrette, which adds a bright, citrusy flavor.

This roasted asparagus recipe is simple to make and only takes a few minutes. It's a great way to use up fresh asparagus and is a delicious and healthy side dish for any meal.

Big Mama's Roasted Asparagus
Serves: 4
Ingredients:
  • 1 pound asparagus, trimmed
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1/4 cup sliced almonds
  • 1/4 cup Big Mama's Calamondin Vinaigrette
Preparation:
  1. Preheat oven to 400 degrees F (200 degrees C).
  2. Toss asparagus with Big Mama's Calamondin Vinaigrette, salt, and pepper.
  3. Spread asparagus on a baking sheet in a single layer.
  4. Roast in the oven for 10-12 minutes, or until tender.
  5. While the asparagus is roasting, toast the almonds in a small skillet over medium heat.
  6. Remove the asparagus from the oven and top with the toasted almonds and more vinaigrette if you'd like.
  7. Serve immediately.
