Elisabeth's Avocado and Artichoke Heart Salad with Big Mama's Calamondin Vinaigrette

Elisabeth S. emailed us her Avocado and Artichoke Heart Salad—a fresh, easy-to-make salad that’s perfect for showcasing the bright, citrusy flavor of our Calamondin Vinaigrette.

Avocado and Artichoke Heart Salad

Ingredients:

  • 1 avocado, coarsely chopped
  • 1 can quartered artichoke hearts (packed in water)
  • 1/4 - 1/3 cup chopped parsley
  • 2 thin slices of red onion, chopped
  • 2 tablespoons Big Mama’s Calamondin Vinaigrette
  • Splash of white vinegar
  • Salt and pepper to taste

Instructions:

  1. In a medium bowl, combine the avocado, artichoke hearts, parsley, and red onion.
  2. Mix the Calamondin Vinaigrette with a splash of white vinegar, then drizzle over the salad.
  3. Toss lightly to coat, and add salt and pepper to taste.
