My Daughter-in-law's Primavera Salad with Chickpeas, Mushrooms, and Avocado

This week’s salad is a true gem, and it was whipped up by none other than my wonderful daughter-in-law, Amy. 

Amy's salad is a symphony of flavors and colors that'll make your taste buds do the two-step!
 
Here's what she's put together for us:
🍄 Sauteed Mushrooms
🌶️ Yellow Bell Peppers
🥑 Creamy Avocado
🧆 Hearty Chickpeas
🍅 Cherry Tomatoes

And the secret ingredient that ties it all together is my very own Calamondin Vinaigrette. It's a little bottle of sunshine, with that zesty, tangy goodness that'll make your mouth sing.
Now, I may be 81 years young, but I can tell you that Amy's creation is something special. It's got that earthy richness from the mushrooms, the sweetness of those bell peppers, the creamy dreaminess of the avocado, the hearty satisfaction of the chickpeas, and the pop of juiciness from those cherry tomatoes. And when that Calamondin Vinaigrette gets in the mix, it's like a party in your mouth!

I love experimenting with my garden and coming up with new recipes, but I must say, Amy's got a knack for this. She knows how to make a simple salad into a true masterpiece. I'm proud to have her in the family, and I'm even more proud to share her creation with all of you.
