Big Mama’s Stir-Fried Veggies and Noodles

Satisfy your hunger with Big Mama’s Stir-Fried Veggies and Noodles!

1 package (8 ounces) rice noodles
1 tablespoon vegetable oil
1/2 pound mushrooms, sliced
1 cup shredded carrots
1/2 red bell pepper, sliced
1/2 cup snow peas
1/4 cup Big Mama's Calamondin Vinaigrette
1 tablespoon sesame seeds

- Cook the rice noodles according to the package directions. Drain and rinse with cold water.
- Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the mushrooms and cook, stirring occasionally, until softened, about 5 minutes.
- Add the carrots, bell pepper, and snow peas and cook, stirring occasionally, until crisp-tender, about 5 minutes more.
- Stir in the rice noodles and vinaigrette. Cook, stirring constantly, until heated through, about 2 minutes.
- Transfer to a serving bowl and sprinkle with sesame seeds. Serve immediately.

* For a more flavorful stir-fry, you can marinate the vegetables in our vinaigrette for 30 minutes before cooking.
* You can also add other vegetables to the stir-fry, such as broccoli, zucchini, or snap peas.
* Serve the stir-fry with your favorite protein, such as grilled chicken, shrimp, or tofu.
