Gary's Air Fried Corvina
One of our longtime customers, Gary H., sent in this wonderful recipe for air-fried Corvina. Big Mama tried it and gave it two (green) thumbs up! Bring the taste of the sea straight to your table with Gary's easy, flavorful air-fried Corvina recipe!
Ingredients:
- 2 lbs fresh Corvina (a solid chunk or fillet)
- 2 tbsp olive oil
- Your favorite dry rub seasoning
- Big Mama's Calamondin Vinaigrette
Instructions:

Prepare the Fish:
- Rinse the Corvina and pat it dry with paper towels.
- Brush olive oil evenly over the surface to help lock in moisture and ensure the seasoning adheres well.

Season:
- Generously sprinkle your favorite dry rub over the fish, coating it on all sides. Feel free to use a store-bought blend or create your own with salt, pepper, garlic powder, paprika, and herbs.

Preheat the Air Fryer:
- Set your air fryer to 400°F (200°C) and preheat for about 5 minutes.

Cook:
- Place the seasoned Corvina in the air fryer basket. Ensure there’s space around the fish for proper air circulation.
- Cook for 18–20 minutes, depending on the thickness of the fish. The Corvina should be golden on the outside and flake easily with a fork.

Serve:
- Remove the fish from the air fryer and let it rest for 2–3 minutes before serving.
- Drizzle Big Mama’s Calamondin Vinaigrette liberally so your Corvina tastes great!
