We’re excited to share a delicious new recipe from one of our fans! Introducing Sabra's Cilantro Citrus Chicken Salad—a fresh, vibrant mix of juicy tomatoes, sweet corn, creamy avocado, red onion, and tender grilled chicken, all topped with a squeeze of lime and a sprinkle of cilantro.
 
And, of course, the magic ingredient? Big Mama’s Calamondin Vinaigrette! Sabra knows how to pick a winner, and this zesty dressing ties all the flavors together with the perfect citrusy kick.

Sabra's Cilantro Citrus Chicken Salad

Ingredients:

  • 2 cups mixed greens (romaine, arugula, or spinach)
  • 1 cup grilled chicken breast, sliced
  • 1 cup cherry tomatoes, halved
  • ¾ cup sweet corn, cooked (fresh or grilled for extra flavor)
  • 1 avocado, diced
  • ¼ cup red onion, thinly sliced
  • ¼ cup fresh cilantro, chopped
  • 1 lime, cut into wedges
  • ⅓ cup Big Mama’s Calamondin Vinaigrette

Instructions:

  1. Prepare the Chicken – Season and grill the chicken breast over medium heat until fully cooked (about 6-7 minutes per side). Let rest, then slice into strips.
  2. Assemble the Salad – In a large bowl or serving platter, arrange the mixed greens as the base.
  3. Add the Toppings – Scatter the cherry tomatoes, sweet corn, avocado, and red onion over the greens.
  4. Top with Chicken – Place the sliced grilled chicken on top.
  5. Finish with Flavor – Sprinkle fresh cilantro over the salad and squeeze fresh lime juice to brighten up the flavors.
  6. Drizzle & Serve – Generously drizzle Big Mama’s Calamondin Vinaigrette over the salad. Toss gently and serve immediately.
