Big Mama's Baked Salmon

Ingredients:
  • 2 salmon fillets (about 8 ounces each)
  • 1/2 bottle of Big Mama's Calamondin Vinaigrette
  • Salt and pepper to taste
  • Your favorite sides, such as roasted vegetables, rice, or pasta
Preparation:
  1. Place the salmon filets in a container and pour half a bottle of Big Mama's Calamondin Vinaigrette.
  2. Set it in the refrigerator to marinate for 30 minutes to 4 hours.
  3. Preheat the oven to 400 and cover a large baking pan with tin foil.
  4. Place the salmon filets and marinade on the baking pan. Make sure to rub the marinade all over the sides and top of the filets so that it has no dry areas.
  5. Season with kosher or pink Himalayan salt and pepper.
  6. Bake the salmon in the oven for 12 to 15 minutes or until the salmon is cooked through. If you want it a little crispier, broil it for 1-2 minutes at the end.
  7. Garnish with fresh parsley, lemon or add some more Big Mama's Calamondin Vinaigrette for the perfect finish!
