Pasta Salad with Big Mama's Baked Chicken

Over the next few weeks, we'll release a few interesting ways customers have used our dressing. You can find a list of nearly 30 ideas on our website.

First up is a delicious Pasta Salad with Big Mama's Baked Chicken. We tested this with Big Mama's grandchildren, and it was a resounding success! Order our world-famous dressing and make this dish for a guaranteed hit in your house!

Serves: 4
  • Rotini or Penne Pasta - 1 box
  • Carrots Peeled Whole - 3
  • Broccoli Spears - 12 qty
  • Corn - 1 Can
  • Boneless skinless chicken breasts - 4 to 6
  • Big Mama's Calamondin Vinaigrette - Two 12 Ounce Bottles 
Big Mama's Baked Chicken
  1. Poke both sides of the chicken breast with a fork, and place it into a Ziploc bag.
  2. Pour one 12 oz. bottle of Big Mama's Calamondin Vinaigrette onto the chicken and place it in the refrigerator for at least 30 minutes. Want more flavor? Let it marinate for 6 hours.
  3. Add the chicken and marinade to an oven-safe dish and bake until the internal temperature reaches 165 degrees (should be around 45 minutes at 350 degrees). 
  4. After it's finished, slice it into bit size pieces.
Pasta Salad
  1. Prepare the pasta per its instructions.
  2. Wash carrots and slice them into rounds.
  3. Wash and prep the broccoli spears and corn. We like to steam both the corn and broccoli.
  4. When the chicken and pasta are finished, get a large bowl and combine all ingredients.
  5. Toss with Big Mama's Calamondin Vinaigrette and watch as everyone asks for seconds!
